It was only a matter of time before I made a recipe with Canada's most recognizable food - Maple. Sap is turned into syrup by boiling it - it takes about 45 litres of sap to make just one litre of syrup, and could be further refined into granules if desired. Traill refers to this as homemade sugar, and while it could be produced locally, the labour required was more than what most settlers were willing to put in.
